What is Droëwors? And what makes it different from cabanossi?

Droewors is the original South African dried sausage, and the format that predates the whole category. The beef is minced rather than sliced, seasoned with coriander, cloves, and pepper, then stuffed into a natural casing and air-dried over several days. The result is a tender-flex texture which is juicy and has an even more pronounced spice profile when compared to normal cooked sausages. For South African expats it's the taste of home. If you’re trying it for the first time it might just become your forever snack.

Cabanossi is a different format again. European-style seasoning, herb-forward, with the same grass-fed NZ beef and natural casing underneath. Where droewors is built around traditional South African spice, cabanossi is built around a herb and garlic blend that's been a staple across European charcuterie for a long time. Both are air-dried. Both have 45g of protein. Both are made without the artificial preservatives, MSG, and fillers that most commercial sausages include. The difference is the flavour. The standard is the same.

Frequently asked question

Unopened biltong has a shelf life of 30 days. We make it daily in Matakana without artificial preservatives, so unlike commercial biltong it is not built to sit on a shelf for months.

Once you open the pack, we recommend transferring any leftovers into the brown paper bag included with your order and storing it in the fridge. The paper bag lets the biltong breathe rather than sweat, which keeps the texture exactly where it should be. Stored this way it will stay fresh for up to 7 days.

We include the brown paper bag with every order because it genuinely makes a difference. Plastic traps moisture. Paper manages it. That is the whole reason traditional biltong has always been stored and sold in paper.

One thing to avoid regardless of where you store it: sealed plastic containers or zip-lock bags. Any environment where condensation can form will speed up mould. Paper and airflow are your friends.

45g of protein per 100g pack. Low carb. Some spice mixes use very small amounts of brown sugar to balance the flavour, so neither product is 0g sugar, but the carb count is minimal. Both products fit naturally into low carb eating. Most flavours are gluten free, though it pays to check the pack label for the most current allergen information, especially if you have a severe sensitivity or coeliac disease.
