Our biltong is traditionally cured and slowly dried under carefully controlled conditions, with gentle temperatures between 20–30°C and balanced humidity levels, creating the perfect environment for exceptional flavour, texture, and quality.The cure takes 72 to 96 hours inside our purpose-built Kalahari Khabu drying cabinets, which replicate a traditional South African dry season right here in Warkworth Auckland

When beef is heat-processed in a dehydrator or oven, the protein structure shifts and moisture is driven out much faster. The result is a chewier strip that is quite different from the melt in your mouth experience offered by traditional biltong. Biltong air-dries slowly. Less moisture loss, more natural beef flavour, and thicker cuts that have a satisfying chewy exterior while staying tender through the middle. Unopened biltong has a shelf life of 30 days stored in a cool, dry place out of direct sunlight. We make it fresh to order with natural preservatives only, so it can’t sit on a shelf for twelve months pretending to be fresh.
Once opened, finish it within 4 days. At the end of the day treat it like real food, because it is. That means, keeping it in a cool, dry spot with the bag resealed tight. No fridge required, though popping it in there once opened will extend things a bit.
If you're in a humid part of NZ like the Far North, the biggest enemy is moisture in the air. It makes the biltong sweat and speeds up mould. If you do get surface mould, a rinse in warm vinegar solution and a day in the fridge will usually rescue the batch.
It depends on the flavour you choose. Check the flavours and pick from the options that meet your needs. With 45g of protein per 100g pack. Low carb.
